Blueberries



The blueberries are almost ready.

This photo is from last year, but the same holds true right here and now.  Last year we had a bumper crop.  I gave them away, and still have bags in the freezer.  There does not look like as many on the bushes this year.  I'm kinda glad.

Here she is, Miss . . .



 . . .  American Summer Sandwich.

Seeing a few tomato sandwiches, (a.k.a., mater sammich) on blogs the past few days, I remembered this photo from a couple of years ago.
Although this one is on wheat bread, the right way is with good ole' white bread.
We can eat healthier wheat bread the rest of the year.



Mater Sammich Done Right

One 3/4 inch thick, bread sized mater slice, cut from the center of the mater
Two slices Sunbeam Old Fashioned bread
Lots of Kraft Mayo - not low fat, Olive Oil, or otherwise
Absolutely NO substitutions, including, heaven forbid, Hellman's or any "salad dressing"
Copious amounts of salt and pepper
Two or three napkins

Eat it.

Summertime



Maybe not so much the fries, but a grilled hot dog and relish mean summertime to me.

Summer also means that soon the heat and humidity will prevent me from enjoying it.

How many pots are you?




Me?  I'm a one pot person.

No real recipe here, but I know a couple of you will ask.

Brown kielbasa or ground round or both, with onion.
Add a can of tomatoes.
Add a can of tomato sauce.
Add raw cabbage.
Add whatever seasoning you want.
When cabbage is near done,
add a can of red beans.
Cook a little while longer.

Serve over creamed potatoes or rice or noodles.
Ok, that makes it more than one pot, doesn't it.

Yes, it's like stuffed cabbage, but without the trouble of stuffing.

Green Tomato Spice Cake


People who know me will probably think my blog has been hacked since this is the second cooking post in the same week.  I tried this recipe and it is delicious.

I saw this recipe at Lazy J Bar C Farm blog.  She got it from Teresa @ Eden Hills which is where the actual recipe is.



This is approximately the color of the batter.  There was natural light, fluorescent light, and incandescent light when I took these photos which is more than a challenge for my white balance.



Of course, cream cheese frosting makes anything better.

Try this cake if you have green tomatoes going to waste.  
Or, if you don't have green tomatoes, you might want to go find some.

Yummy fall food



Some, maybe most, of you will snurl your nose at this.
All I can say is to try it, you might like it.

This is mustard greens and kale.  We prefer collards, but they didn't come up well this year.


Pick enough for a sink full.
Clean your sink first, rinsing all cleaning products away very well.
Fill sink with greens, then several inches of water to wash well.
Swoosh them around with your hands for a couple of minutes.
If the stems are large and tough, you may need to remove them.
Two wash cycles should do it unless they are really dirty.
Wash until there is no grit in the bottom of the sink.
If they are buggy - well, use your discretion.  Personally, I don't like bugs in my greens.


Saute bacon, onions, garlic in a large pot with olive oil.


Mix a spoonful of beef base with a little water.
Add balsamic vinegar and about a tablespoon of sugar.
About half to a full cup of this mixture is good for a large batch.
Most of my mixture is vinegar.


We use a little red wine at this point, letting the alcohol cook away.
Then add the vinegar mixture.
Some heat is good also.  We use red pepper flakes and/or Tabasco to taste.

Do NOT add water.  


Drain the cleaning water from your sink full of greens.
(If there is grit in the bottom of the sink, wash them again.)

Move the greens to your pot.  Paula Deen and some others would have you chiffonade them before cooking.  We don't bother.


You may have to let them cook down a bit before all of them will fit in the pot.
There will probably be enough water on the greens from the washing for cooking liquid, plus liquid comes from the greens during cooking.
You need only about two inches of liquid in the bottom to start with.
Do NOT add water unless necessary as this will dilute your seasoning.
Cook at a simmer until darker green.  One to two hours will do it depending on how tender they are when picked.  Move them around a few times during the cooking.

Yes, they do have their own smell during cooking.
It's fall, open the windows.


And eat with sweet potato and pork.
I put pickled jalapeno liquid on mine to eat, and maybe a jalapeno slice or three.
